I’m not sure if I really love to cook but I do find it relaxing if the food I’m cooking is not too completed or does not take too long. I guess what I want is to serve my family a healthy, quick and tasty meal. So when my kids were growing up I changed the recipes I found in cookbooks and tried to make them fast. Today I’m going to share with you 2 vegetable recipes that are quick and my family would always eat.
The first and one of my favorites is for asparagus. You can make delicious asparagus fairly quickly. First I cook them in a pan laying flat with about a quarter of inch of water. I don’t want to boil them I want to steam them. After they start steaming it takes about 3 to 5 minutes for them to cook. I test the asparagus by sticking them with a fork and I do not like them to be real soft (also I will be cooking them more later.) When they are finished drain the water and add a little olive oil and almonds (you could use pine nuts but I quite because they have gotten really expensive.) Heat the oil and stir fry the asparagus and almonds until the almond are toasty (add a little salt and pepper.) After that is cooked turn the stove off and sprinkle parmesan cheese on top put a lid on and let the cheese melt just takes a minute or so and they are ready to serve.
